Indian food was on the menu again last night, and this time I didn’t squander the opportunity to capture the miracle of the chapati-making process.

If you ever get burnt chapatis served to you in an Indian restaurant, now you’ll know why. It’s not there for texture, or aesthetic value—it’s because the cooks got so giggly at the sight of the bread ballooning up that they forgot to watch what they were doing.
